Things To Know
CAKE PRICES:
Cake prices vary according to the flavor
combinations you choose. A basic two layer cake-
with buttercream or jam filling of your choice,
covered in buttercream costs an average of $1.50
a slice. Your choice of decoration will dictate the
final price of the cake and we will work with you to
find what works for you. Hundreds of styles are
available and we welcome photos, swatches,
china plates or anything else that you want us to
work with. If your have something that you
absolutely must have on your cake, please
bring it.
HOW MUCH CAKE:
The amount of cake that you will need will
depend largely on the occasion. For
instance, a wedding cake portion is
generally smaller than the portion of cake
served at an afternoon tea party since the
guests have generally already eaten dinner
or a buffet meal.
Bare in mind that some people will not eat
cake at all, others will have more than one
piece, some guests will not turn up and
inevitably there will be gate crashers. Also
remember a 6" round cake will yeild less
portions than a 6" square cake.
We can guide you as to the number of
servings you will need, but the ultimate
decision will be up to you. Most brides order
enough servings for invited guests minus
20%.
CAKE SHAPES:
When choosing a cake shape, think about the vibe of your wedding. A romantic affair may call for classically elegant
round stacked tiers while a city chic wedding may call for modern squares.
ROUND: Because of its popularity, this shape is considered the king of all cakes. While some may consider basic
round tiers to be boring, the simplicity and elegance make a round cake the perfect backdrop for interesting textures
and colors. It is also the least expensive shape to order.
SQUARE: A square cake, with it's sharp lines and angles, always makes a modern statement. Soften the hard edges
with elegant touches like flowers, pastel colors and paper thin embellishments.
PETAL: Sometimes referred to as scalloped, this shape has a flower like, sculpted appearance. Maintain the softness
with decorations that have a light touch.
TABLE CAKE: Interesting idea, each table has its own cake adorned with a sugar bouquet which one of the lucky
guests gets to take home after the cake is eaten.
HEXAGONAL: A six-sided cake is the creative answer to a classic square cake. With such a striking appearance, you
will keep the decoration fairly structured.
YOUR BUDGET
Decide on your priorities, how important is it to you to have a cake? Remember some of your guests will feel
cheated if there isn't a wedding cake! Depending on it's importance set a budget for your cake and be sure to give
us some indication of this when discussing your cake. I will try to show you things that will fit into your budget. It is so
easy to get carried away designing a cake and is often disappointing for the couple when they find it's perfect but
exceeds their budget. Our aim is to work with you in any way we can to make sure your complete satisfaction.
Buttercream cakes with icing flowers and designs will be less expensive than Fondant cake with gumpaste (sugar)
flowers. The more time spent and more complicated the design is, the more you should expect to pay for the cake.
WHEN TO BOOK
Be sure to put down a deposit to reserve
the date well in advance. While it may be
possible to order cakes at short notice,
most fancy cakes and especially wedding
cakes are best ordered well in advance,
three to six months is the usual amount of
time to ensure that you get what you want.
Some more eleborate decorations take
days or even weeks to dry before they can
be placed on the cake.
SAMPLES:
The sample cake is free of charge, we
will provide you with one. It is based on
the flavors you requested in our phone
conversation or email. The first cake is
free of charge, and any additional
cakes are $3.00 each. Please call one
week ahead to order samples.
(samples are not decorated)
DELIVERY:
Most brides choose to have their cakes delivered. There is no charge for delivery of weddings
cakes over $250. within a 30 mile radius. Otherwise there is a $.50 per mile round trip charge. If
the cake is large, delicate or at all complicated it is well worth having it delivered. Some designs
cannot be assembled until on site. You wouldn't want a "lay person" to assemble such a cake. We
generally do not deliver birthday cakes or cookies (unless ordered with the wedding cake to be
delivered.) You will be called the week before your wedding with the time that your cake will be
delivered. You should call your contact at the reception location and inform them of this time so
they can make sure that the doors will be unlocked, and the cake table is ready for placement of
the cake. You should have made arrangements to have the tablecloth and skirting finished before
this time.
COLORS ON THE CAKE:
If you are having color on your cake, be sure
to bring along a swatch of fabric, or piece of
ribbon for us to match. There are hundreds of
shades of the same color, and if you want a
close match, we need something to compare.
CUTTING THE CAKE:
Be sure to ask your caterer if they will cut your
cake, and if there is an extra charge. We do not
offer this service. Make sure you have a serving
knife. If you are asking a friend or family member,
do they know the proper way so you get the right
amount of servings?
FRESH FLOWERS:
Fresh flowers can be put on cakes, but
remember, fresh flowers can be treated with
pesticides. Talk to your florist, and choose
wisely. We do not provide fresh flowers for
cakes.
SUGAR FLOWERS:
If you would like sugar flowers on your cake, you
can choose them from the selection that we have
or can be ordered. Be prepared to pay extra for
these flowers as they take special skill and extra
time to make.
CAKE TABLE PLACEMENT:
Take the background into consideration
when placing your cake table. Remember,
anything on the wall behind your cake will be
in all your pictures. Make sure the cake table
is going to be the appropriate size for the
cake design you have chosen.
IF SOMETHING UNEXPECTED HAPPENS
99.9% of the time everything goes as planned. If it
doesn't, usually we can make adjustments,
corrections, phone calls, etc. to fix the problem. A
lot of people are working to make this day
wonderful for you. Because of this, something
could go wrong. DO NOT LET IT RUIN YOUR
DAY!!!! If it is not life-threatening, it will only serve
as a funny memory to tell your children.
DON'T BELEIVE EVERYTHING YOU SEE:
Yes, looking at beautiful pictures of cakes online or in magazines can be a delicious experience. But
what happens in magazine-land doesn't always work in the real world. Sadly, not all bakers can work
the magic that you see whipped up in photos. Magazines have food sytlists, editors and assistants
working nonstop to keep the cakes looking perfect. These people spend hours fixing the sweating,
dripping, leaning, or sagging that can happen to a cake after a while (especially under hot lights). And if
what they do doesn't work, they can fix it in PhotoShop. They also have the luxury of creating cakes
from stuff that isn't edible- most cakes in magazines are iced pieces of stryofoam, which from what we
can tell certainly doesn't taste very good.
In the end, instead of finding something in print and aiming to replicate it in reality, choose elements of
the cakes you love-- shape, color, details-- and let those elements ring out on your cake.
ARTIFICIAL FLOWERS:
If you want a topper made from artificial
flowers, we can create one for you but it is not
part of a normal cake quote. There would be
an extra labor charge for the creation of a
topper. (price would not include the cost of the
flowers)
OTHER THINGS TO THINK ABOUT:
Some bakers excel at taste but not at construction, while others create masterpieces that aren't so palatable. Really good bakers can do both, building
a cake from the best of both worlds. You'll want to be able to sample a real cake-- one with icing and other decoration-- to ensure you'll be getting a
cake that tastes as good as it looks.
If you have your heart set on a specific taste sensation, ask whether the baker would be willing to work from a recipe. You may want an unusual flavor,
or maybe one that's not part of the roster-- or perhaps you'd like a re-creation of a family recipe on a grand scale. Just be sure to ask for a test-run so
that there are no surprises.
The other thing to keep in mind is how well the cake is going to last throughout the party. For example, buttercream frosting, is quite delicious, and
holds up well sitting out in an air-conditioned room for about 4 hours. Fondant is a much better option for cakes that need to withstand heat, humidity or
a long time without refrigeration. The problems with fondant is that it is very time consuming & expensive and many of your guests won't like having to
"chew" their cake, thus they pull it off. So you've wasted a large amount of money. Your filling type also dictates how long the cake can be without
refrigeration.
We do not recommend whipped cream for two reasons:
It is not suitable for fondant or rolled buttercream covered cakes because of the high moisture content, but more importantly,
It is not suitable for large cakes that cannot be kept refrigerated and especially not recommended for wedding cakes where the cake is used as the
center piece and is left for many hours at room temperature..... and it is not considered food safe to do so.
